Cooking for cousin: Creamy broccoli soup 従姉妹料理:クリーミー・ブロッコリー・スープ

Soup is such great food. Not only is it easy, tasty and cheap – it’s also extremely healthy. All nutrients in the veggies or whatever ingredient you use will stay in the soup. Last week I accidentally bought a bit too much broccoli on special offer and today when I felt like soup for dinner, I whipped together this recipe. Easy – yes! Tasty –yes! Cheap – yes! Healthy – yes! AND, vegan =)

You need (3-4 people):(日本語にて下記を見てください!)

– 2 small stems of broccoli
– 1 carrot
– 0,5 onions
– 1 garlic clove
– Olive oil for frying
– 2 tablespoons of cumin
– 1 teaspoon sambal oelek
– (1 kaffir lime leaf)
– 500 ml liters of vegetable stock
– 300 ml liters of water
– 100 ml of soy cream (you can use regular too ofcourse)
– salt and pepper for seasoning

Dice broccoli, slice the carrot, chop the onion and garlic and fry it all together with cumin and sambal oelek. When the veggies have started to get a bit soft, after around 10 minutes, add water and vegetable stock and the lime leaf (optional). Bring to a boil and let simmer for around 15 minutes or until all vegetables are soft. Remove from heat and mix the vegetables into soup with a hand blender until completely smooth. Add the soy cream and salt and pepper if needed. Note: If you want the soup to be a bit thicker, you can mix around 1 tablespoon of wheat flour with 2 tablespoons of soy cream and add to the soup while stirring. Bring it to a boil again and it will get thicker.

    1. Yes it really was actually! It’s amazing how easy it is to make vegetables even more delicious by just boiling and making purée out of them =)
