Easy and delicious fruit cupcakes with topping

Everybody likes cupcakes. And these are the easiest, yet the very tastiest ones that I’ve ever eaten. They are simply called fruit cupcakes with topping. Because that’s what they are, delicious, filled with berries or fruit of your choice and topped with some nuts. They take no time to make and have few ingredients. One think worth thinking about is that if you use real butter the result will be so much better. It’s totally worth it using proper ingredients. If you find it too unhealthy, then eat less. Half a wonderful cupcake is better than a whole boring dry one. When it comes to the fruit or berries, you can take pretty much anything. I used rhubarbs the other week and these are made with blueberries. My favorite is blackberries, and I imagine that raspberries and also apples would work. Be bold – try something you like! Here’s the recipe – enjoy!
You need for 12 big cupcakes12
– 125 grams of butter
–  1,5 deciliters of sugar 150
– 2 eggs
– 2,5 deciliters of all purpose flour 250
– 1,5 teaspoons of baking soda 1,5
– 2 deciliters fruit or berries of your choice. 200
For topping
– 3 tablespoons of nuts of your choice, for example almonds or walnuts (if you’re allergic to nuts you can swap them for rolled oats.
– 1 teaspoon of cinnamon 1
– 3 tablespoons of sugar (if possible brown sugar) 3
– 3 tablespoons of butter 3
– 1 tablespoon of flour 1

Mix butter and sugar until fluffy. Add the eggs, one at the time. Mix flour and baking soda and sift and add. Fill 1/3 of the cupcake molds and put the fruits or berries on top. Fill the molds with the rest of the batter. A mold should be filled approximately 2/3 up. In a small saucepan, mix the ingredients for the topping and cook for a couple of minutes until the sugar has melted. Put a teaspoon of topping on top of every cupcake. Bake in oven for about 15 minutes or until golden brown at 200 degrees Celsius. Couldn’t be easier, could it?
